The exact factor, and why it is exact

One pound is defined as exactly 0.45359237 kilograms, fixed by the international yard and pound agreement of 1959. That is worth knowing because it means the ratio is a definition rather than a measurement:1 kg = 2.20462262… lbs. The ×2.2 shortcut, and when not to use it

Multiplying by 2.2 — or doubling and adding ten percent, which is the same thing — is a good mental estimate. It runs about 0.21% low, so the error is invisible on small numbers and grows with size: half a pound out at 100 kg, over a pound out at 250 kg. That is harmless for conversation and it matters forairline baggage allowances where you are close to a 23 kg limit, shipping ratesbanded by weight, gym plates loaded in mixed units, and anything medical. Stones, and the British habit

Anyone converting body weight for a British context needs a third unit. One stone is 14 pounds, or roughly 6.35 kg, and UK body weight is conventionally spoken in stones and pounds — "eleven stone four" rather than 72 kg. The two-step conversion is to get pounds here, then divide by 14, keeping the remainder as pounds. So 70 kg gives 154.32 lbs, which is 11 stones with 0.32 lb left over. The habit is peculiar to the UK and Ireland; Americans use plain pounds and almost everyone else uses kilograms.

Ounces, grams, and the fluid ounce trap

Kilograms subdivide by a thousand into grams, which is the entire argument for the metric system in one sentence. The trap worth flagging is the fluid ounce, which measures volume rather than weight and is a completely different unit that happens to share a name. A fluid ounce of water weighs approximately one ounce, which is where the confusion comes from, but a fluid ounce of flour or honey does not. Recipes that mix the two — pounds for meat, fluid ounces for liquid — are not being inconsistent, they are using two unrelated measures. When a recipe says "8 oz", the way to tell which is meant is whether the ingredient is poured or weighed.
