Two things you lose, and they are permanent
Worth stating before anything else, because neither can be undone afterwards:
- Animation. A JPG holds one image. A multi-frame GIF is reduced to frame one and every other frame is discarded. Keep the original file if the movement matters.
- Transparency. JPEG has no alpha channel, so transparent pixels must be filled. They are flattened to white by default, with a black option next to the quality slider — which matters when your artwork is light-coloured and would disappear against white.
Converting to JPG does not clean up a GIF
This is the misconception worth correcting, because it leads people to convert for the wrong reason. A GIF is limited to a 256-colour palette, and that reduction happened when the GIF was created. The banding across gradients and the speckled dithering in smooth areas are already in the pixels.
JPEG cannot recover colours that were thrown away. Converting preserves the banding exactly as it is, and then adds its own compression artefacts on top — JPEG is particularly poor at the hard edges between flat colour areas, which is precisely what a dithered GIF is full of. The result is a file with both sets of problems.
The file will often be bigger, not smaller
The usual assumption is that JPEG means smaller. That holds for photographs and frequently fails for the kind of content GIFs actually contain:

- The GIF contains a photograph. Photos saved as GIF are already compromised by the palette, but JPEG will at least store them far more efficiently from here on.
